New Year & New Goals

Where has January gone? This month has flown by! I am still having trouble writing 2016 instead of 2015. Anyone else in the same boat? Okay, glad I am not alone. Maybe by next month I will have this process down, fingers crossed.

With the new year kicked off, I decided to dust off the old blog and give it a facelift. What do you think? Ashley, from The Grits Blog did an amazing job! If you are looking for a new blog design at a reasonable price, shoot Ashley an e-mail and tell her I sent you. I promise you will not be disappointed. I also decided to change the name of the blog from Sassy Southern Living to Sassy Southern Lindsey. If you know me, I am a tad southern and a whole lot of sass!

Did you make any resolutions this year? How's that going, are you staying strong and dedicated? I have given this a lot of thought and here is what I want to do during 2016:

1) Be patient
The good Lord knows that I need to work on this and worry less!
2) Send more snail mail
Because who doesn't love a handwritten note.
3) Be in the moment
    Put the iPhone down, Lindsey!
4) Celebrate with friends
Schedule time to celebrate big things and small victories (insert party emoji here).
5) Keep a prayer journal
I want to keep a weekly prayer journal for my small group girls.

I would love to hear about your 2016 resolutions! We are all in this together, let's help one another!

Barklynn the Bichon

Having a dog changes your heart. They come into your life and give you unconditional love. You can’t help but love them back like family. With that said, my fur baby Barklynn is the most adorable little ball of fluff. She came into our life right before Valentine’s Day. There is kind of a funny story to it.

My husband, Jered went to Texas for a three-day weekend bachelor party. We had been talking about getting a dog for a few months prior. I had been doing my research finding the perfect little puppy to add to our family. I found this tiny little girl named “Pearl” who was looking for a home. That was it I made my decision. The Davidson’s are getting a dog!

Friday night I went to PetCo and purchased all of the supplies it takes to be a puppy parent (all pink everything). I called my sister and persuaded her to go on a road trip to pick up said puppy. The moment I got to hold her for the first time melted my heart. My sister got to hold her all the way back to Edmond. I think she loved every second of it. It took her a little while to warm up to Jered, but now they are smitten. I think that situation was a two-way street.

The past few months have been a blast! She is a huge fan of road trips and dog parks. She also loves going to PetCo and searching for new treats. In our house, we live for the weekend. Each Saturday morning we like to go on a "puppy adventure" to Aspen Coffee or Starbucks. Just look at that little smile, she is one happy lady!

Last weekend we celebrated her first birthday in style. I found the cutest little pet boutique in Utica Square. The Dog Dish has your pet birthday supplies on lock. Yes, I am that girl, having a birthday for her dog. I found her a happy birthday treat and a pink birthday party hat.

My Momma’s Taco Soup

I type this curled up on my couch with my favorite blanket. The cold front has moved into Oklahoma, and I am not looking forward to the freezing temperatures. There is one thing that I do like about the cooler temperatures, say it with me—crockpot. The crockpot is going to be your best friend during the winter. I have one recipe that is a huge hit, and I am going to share with you. This soup is perfect for freezing leftovers too.

My Momma’s Taco Soup

Ingredients:
  • 1 pound lean ground beef
  • 1 package of taco seasoning
  • 1 package of dry Ranch seasoning
  • 2 14 ½ ounce cans diced tomatoes, undrained
  • 1 can Rotel tomatoes (I like the one with cilantro), undrained
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can whole kernel corn, drained
  • 1 can hominy, drained
  • 1 avocado halved and sliced, for topping*
Directions:
  1. Brown the meat in a large saucepan, drain, add into slow cooker
  2. Drain the beans, corn, and hominy
  3. Add the diced tomatoes, Rotel, and drained vegetables into the slow cooker
  4. Add Spices, and mix to combine
  5. You can simmer this mixture on low for four hours. Eat and enjoy! *You can top this soup with grated cheese, sour cream, or the avocado slices.
If you have leftovers, feel free to freeze them. You just have to let the soup cool, place into zip lock bag, lay flat, and place into the freezer. Write the date on the bag before you fill it so you know when you need to eat it by. I would try to eat it in two months.

Stay warm out there friends, this week is going to be a cold one! I hope that this Taco Soup warms you right up.
